Buying halal meat wholesale: 7 points for restaurants and catering kitchens
Certificate, cold chain, specification, ordering rhythm: what restaurants, snack bars and catering kitchens in Germany should check when buying halal meat wholesale.

If you run a restaurant, snack bar or catering kitchen with a halal menu, you don't buy meat on gut feeling. Your guests trust that "halal" on the menu means halal on the plate, and your kitchen needs the same quality in the same form every week. These seven points help you find a wholesaler who reliably delivers both.
1. The halal certificate: valid, clear and shown on request
A serious supplier shares its halal certificate without you having to chase it. Check three things:
- Validity: The certificate has an expiry date. Note it and ask for the new one in good time.
- Issuer: Which body certified it, and which business does it cover?
- Scope: Does it cover the products you buy, for example beef, veal, lamb and poultry?

2. The cold chain from the plant to your cold room
Fresh meat is only as good as its cooling. Ask how the goods reach you: in the supplier's own refrigerated vehicles or by shipping, in which time window, with which records. Check temperature and packaging when you receive the delivery, and store the goods straight away. Mince and poultry are more sensitive than whole beef cuts.
3. A written specification instead of "the usual"
The most common problem in the kitchen is not bad meat but different meat: the entrecôte is cut thicker this time, the goulash coarser, the mince fattier. Agree the following with your supplier in writing:
- the cut (for example rump, shoulder, brisket),
- the weight class or portion size,
- the fat content for mince and burger patties,
- the packaging (vacuum-packed, crate, portion bags).

4. The ordering rhythm has to fit your kitchen
A kitchen plans the next day in the evening. So clarify: What is the latest I can order, and when does the delivery arrive? On which days do you deliver? Is there a minimum order?

5. One supplier for everything saves deliveries and time
Every extra delivery means another appointment, another invoice and another goods-in check. That is why many businesses buy frozen goods from the same wholesaler as their fresh meat. Ask what else is in the range and whether it can come in the same delivery.
6. A named contact person
When something is missing on a Saturday morning, a hotline queue doesn't help. A named contact who knows your business and your specification solves problems faster. Also ask about contact hours and whether you can order by phone or WhatsApp.
7. Delivery note and proof of origin with every delivery
For your own records and for inspections, you need a delivery note and proof of origin with every delivery. A good supplier includes both automatically, not only when asked.
